Ok here we go: Ever since having a non-vegan blueberry muffin at the train station in Milano a couple of weeks ago, I had a desire for making vegan! and healthier blueberry cupcakes. So I found frozen blueberries in the store (which I was told later seemed to be a miracle her in Italy^^!) and as I didn’t had a freezer, I had to use them the next day :D!So it was already about 9:30pm and I suddenly had the inspiration to bake ;)! Yeah that’s me!
So, of cause, I made up the recipe on the spot and enjoyed making 30 little cupcakies! :)
Somehow working in the kitchen always calms me down, being totally absorbed in the process of making the food, listen to my intuition what to do next… It’s like my third meditation of the day! :D
So that’s what I used:
200g freshly grounded spelt flour (wholemeal!)
150g white spelt flour (type 1025)
80-120g raw cane sugar (I did 80g and they weren’t so sweet which i like, but maybe you want a real sweety! ;) )
1tsp baking soda
1 pinch of salt
½ tsp turmeric (makes the dough turn yellow, you don’t taste it!!)
150ml soy milk
70ml sunflower oil
150g blueberries
Preheat oven on 180°C.
I learned when making cupcakes you blend first the dry ingredients together and then all the wet ingredients and in the end you just quickly stir them together that they are just a smooth, pretty liquid mixture, but still sort of fluffy! And then the blueberries you really just pour over the dough and maybe fold them in with two folds (if they are still frozen it’s better or if they are fresh even more!!, otherwise they loose juice and everything turn purple)! But when you take once at a time 1 tbsp per cupcake tin the batter will anyway get mixed together!
I like it when the batter is golden yellow and only the blueberries are the juicy, purple spots in the cupcakes!
I bake the cupcakes for about 15-18min, so they are just getting golden!
Let them cool a little down and take care when taking them out of the tin. -That you don’t burn yourself^^, but also they are pretty soft still!!
Eaten still warm or cold, given to best friends and neighbors, because the best thing about baking cupcakes is you can make everyone happy!

Seitdem ich am Bahnhof in Milano vor zwei Wochen einen echt leckeren, aber unveganen Blaubeermuffin gegessen habe, wollte ich selber vegane und gesündere Blaubeercupcakes machen! Ich fand gefrorene Bio-Blaubeeren im Supermarkt hier, was wohl in Italien ein Wunder an sich ist, wie man mir später erzählte^^! Da ich kein Gefrierfach in meinem Kühlscrank hatte, musste ich sie also -notgedrungen^^- am nächsten Tag gleich verwenden! ;P
Es war schon halb 10 abends, als es mich auf einmal überkam! So bin ich eben^^!
Das Rezept dachte ich mir mal schnell aus und habe es so richtig genossen mal wieder Cupcakes zu machen! Beim Backen kann ich einfach wunderbar entspannen, bin ganz auf die Zubereitung konzentriert und versuche meiner inneren Stimme zu lauschen, was wohl der klügste nächste Schritt ist…. es ist wie meine dritte Meditation :D! Tja, so kam auch Kurkuma zum Beispiel in dieses Rezept, zack einfach sone Idee im Moment!
Also dies waren meine Zutaten (nur mal so alle geschätzt weil ich nie wiege, sondern alles nach Augenmaß mache^^):
200g Dinkelvollkornmehl
150g normales Dinkelmehl (type 1025)
80-120g Rohrohrzucker (Ich hab 80g genommen und sie waren nicht so süß, fand ich gut, aber für Schleckermäuler vielleicht besser 120g^^)
1 TL Backpulver
½ TL Kurkurma (das färbt den Teig gelb, schmeckt man aber nicht, keine Sorge!)
1 MS Salz
150ml Sojamilch
70ml Sonnenblumenöl
150g Blaubeeren
Ofen auf 180°C vorheizen.
Ich ahb gelernt, dass wen man Cupcakes oder Muffins macht, man zuerst die trockenen Zutaten vermischt und dann die nassen und erst am Schluss beide schnell zusammenrührt, nur solang bis ein glatter, recht flüssiger, aber noch lockerer Teig entsteht (10-20s).
Die Blaubeeren habe ich einfach darübergestreut und vielleicht ein, zweimal sanft untergehoben. Später beim esslöffelweise Umfüllen des Teiges in die Cupcakeformen wird er eh vermengt! (Wenn die Blaubeeren noch gefroren oder frisch! sind geht es besser!)
Ich mag es einfach wenn am Ende der Teig golden scheint und nur die Blaubeeren so saftige, lila Punkte im Cupcakes ausmachen!
Ich hab die Cupcakes für etwa 15-18min backen lassen bis sie gerade anfangen gold-braun zu werden. Vorsicht beim herausnehmen der Cupcakes aus ihrer Form, sie sind noch sehr weich und heiß natürlich!^^. Besser kurz abkühlen lassen und sanft mit einer Gabel herausholen. Ich hab ne Silikonform, da kann ich sie von unten rausdrücken!
Noch warm oder kalt genießen, Freunde und Nachbarn eine Überraschung machen, denn das Beste am Backen ist alle glücklich zu machen!
